Whoooppeeee!

Okay, I'm not posting as regularly as I like at the moment - that is because, for the first time in 3 and a half years, I can actually see the light at the end of the PhD tunnel. I've been soldiering on with typos and minor corrections given to me by my extremely patient supervisor, and once these are done, he'll get one more look and then I can finally hand the fricker in. Who would have thought - 82000 words. My brain is well knackered. 


However, there is always time to bake. It's a hell of a lot cheaper than therapy. Lately, I've been experimenting with Whoopie Pies. Thanks to my lovely friend Helen, who gave me The Whoopie Pie Book by Claire Ptak recipe book for my birthday, I now have a whole load of other baked goods try out! The recipes in the book all look delicious, and I first tried making the meringue whoopies (REAL easy) and also lemon whoopies (REAL yum). They are extremely easy to make, but I would recommend piping the mixture out rather than using an ice cream scoop like the book suggests. The best things about whoopies? You can send them in the post to your friends! Just make sure that they're in a sealed bag/container and that it's well wrapped with bubble wrap! Perfect for any occasion!
